Boston Baked Beans


Ingredients

1 pound dry white beans
3 ½ cups water
½ cup brown sugar
¼ cup molasses
¼ tsp. ground cloves
4 tbsp. Dijon mustard
½ pound bacon, cut into ½-inch pieces
1 medium onion, chopped

 

Method

Bring a pot with 1 pound of beans to a boil. Remove from heat and let soak for an hour. Drain and set aside. In a bowl, mix the molasses, brown sugar, mustard, and cloves with 3 cups of hot water and set aside. Line the bottom of a slow cooker with half of the bacon and layer with half of the beans. Next add the chopped onion. Add the remaining salt pork, then beans, then top with the molasses mixture. Cover and cook on low for 8 hours or until beans are tender. If water level is low during cooking, add additional water as needed.
