Cranberry Almond Bark
1 lb. dark chocolate
1 cup whole, raw, unsalted almonds
¾ cup dried cranberries
Melt the chocolate using a double boiler. If you don't have a double boiler, you can easily mimic one by placing an empty saucepan over a pot filled with lightly boiling water. The steam will cook the chocolate above. Cover a cookie sheet with wax paper and set aside. Chop ½ cup of almonds and ½ cup of dried cranberries. Once melted, add the above and fold into the chocolate. Spread the mixture across the cookie sheet. Top with the remaining almonds and cranberries. Refrigerate until set.
