Peach Thyme Popsicles

Ingredients (makes 4 popsicles)

2 cups of water
1 cup packed brown sugar
2 cups fresh peaches, peeled
1 tsp. fresh thyme


Heat two cups of water and one cup of packed brown sugar in a saucepan until the sugar is dissolved. Bring to a simmer until you have created a simple syrup. Set aside and let cool. Puree 2 cups of peaches and 1 teaspoon of thyme. Add to the simple syrup and mix. Pour into popsicle molds and freeze overnight.
