Indulge: Cranberry Almond Bark
Recipe & Photos by Ashley Herrin
1 lb. dark chocolate
1 cup whole, raw, unsalted almonds
3⁄4 cup dried cranberries
Melt the chocolate using a double boiler. If you don't have a double boiler, you can easily mimic one by placing an empty saucepan over a pot filled with lightly boiling water. The steam will melt the chocolate in the pot above.
Cover a cookie sheet with wax paper and set aside. Chop 1⁄2 cup of almonds and 1⁄2 cup of dried cranberries. Once melted, add the above and fold into the chocolate. Spread the mixture across the cookie sheet. Top with the remaining almonds and cranberries. Refrigerate until set.
Tip: Bark makes great trail food and can be easily packed for any adventure. Try experimenting with different ingredients like alternative dried fruits and complimentary flavors (strawberry granola, white chocolate and coconut blueberry, etc). Get creative!
